This is a wonderful winter soup with a truly unique flavour. The pear complements the earthiness of the artichoke, and the fennel seed gives great depth. I came up with it one evening at the café when I was experimenting with Jerusalem artichokes, an ingredient I had very little knowledge of. While artichokes aren’t commonly found in the supermarket, they’re easily grown in the UK and many small-scale, independent grocers stock them.
