This delicious vegan dish has been a staple on our menu for some time and it is loved by many. Redcurrants grow wild in abundance along hedgerows in Skye. They are quite punchy and very sour but are delicious stewed down with a bit of sugar and make a fantastic home-grown alternative to pomegranate. They’re not as widely available as other berries but you should be able to find them in greengrocers or bigger supermarkets during the summer, and you can usually get frozen ones online.
