A frittata is such an easy, wonderful dish to make at home. Similar to a quiche but without the hassle of a pastry crust, it can be served hot or cold, meaning you get to eat any leftovers for lunch the next day. Admittedly, it’s a bit of a fridge-raid dish, usually made up of whatever veg is needing used up. As long as you have a box of eggs, you can make any frittata you like, but this recipe is my favourite!
