I came up with these during the 2020 lockdown, when I was craving Vietnamese cuisine but couldn’t get it on Skye. I had been fantasising about the refreshing taste of paper-thin summer rolls packed with rice noodles, prawns and fresh herbs and dunked in satay sauce when I realised that I had access to an ingredient that would take this dish from good to great – langoustines.
