Growing up, my mother was always cooking hearty stews on the stove, and the strong smell put me off lamb for most of my childhood. However, I’ve since discovered a fondness for it, especially as sheep are reared in abundance on Skye.
These koftas are my favourite way to eat lamb – the strong flavour is lifted with fresh herbs and earthy spices and I add a bit of black pudding into the mix for depth.
