This is the last banana loaf recipe you’ll ever need. It’s incredibly moist and indulgent and yet easy to make – and of course it uses up those soggy bananas left in your fruit bowl. It is particularly wonderful slathered with peanut butter or the miso butter.

Ingredients

  • 3 very ripe bananas, mashed, plus one for the top
  • 2 eggs, whisked
  • 120 ml vegetable oil

Method

  1. Preheat the oven to 180°C/160°C fan.
