This delicious spring spritzer was created by Soña as part of a range of Cùil-aid cordials for our menu. It’s a great way to use up any spare stalks of rhubarb in the garden, and once you’ve made the cordial it can be kept in a glass bottle in the fridge for up to two weeks. Rose water is easy to find in Middle Eastern or Asian grocers, or online.
