Meadowsweet is a delicious wild flower that you find all over Skye in the summer months. It has a distinctive candy aroma and a medicinal taste, and it has been used for its healing properties for centuries. Meadowsweet grows right outside the café so it’s amazing to feature it on our menu, and it makes a very special cordial.

Ingredients

  • 100 g meadowsweet flowers, stalks included
  • 125 g caster sugar

  1. Rinse the meadowsweet flowers under cold water, making sure there are no beasties or dirt clinging to them.
  2. Place the meadowsweet into a saucepan and cover with 200ml water. Bring to a rolling boil and let it bubble away for about 10 minutes.
