This light cake was named in honour of Queen Victoria of England. Often referred to as a Victoria sandwich, the mixture is based on equal quantities of fat, sugar and flour. It is usually pressed together with a layer of jam. Store this cake for up to three days in an airtight container.

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Grease and line two 20cm/8in round shallow cake tins (pans) with baking parchment.
  2. In a small bowl, lightly beat the eggs with the vanilla extract.
  3. In a large bowl, beat the butter with the sugar until t
