A special fluted ring mould with a chimney in the middle is a traditional tool of Austrian bakers. These tins can be used to bake rich yeasted mixtures, or this light almond sponge, which is spectacular when decorated with icing, nuts and fruits. Keep for five days in an airtight container.

Ingredients

  • 225 g/8 oz/1 cup unsalted butter, softened (plus extra melted butter for greasing)

Method

  1. Preheat the oven to 190°C/375°F/Gas 5. Brush a 1.75 litre/3 pint/7½ cup Kugelhupf mould well with melted butter.
  2. In a bowl, beat together the butter and sugar. Beat in the eggs, adding 5ml/1 tsp flour with each egg.
