Sugarpaste makes a smooth finish for a cake and can also be used to mould these delicate arum lilies. Colour the centre of the lilies silver to indicate 25 years of marriage or gold for 50 years.

Method

Put the butter in a large, heavy pan and add the dried fruits and the muscovado sugar. Grate in the rind from one orange and the lemon. Squeeze in the juice from both oranges and the lemon with 75 ml/2½
