This icing can be used to drizzle over sponge cakes.

Ingredients

  • 225 g/8 oz/2 cups icing (confectioners’) sugar

Method

  1. Sift the icing sugar into a bowl and add flavouring. Gradually add enough water to mix to a consistency of thick cream.

  2. Beat with a wooden spoon until the icing is thick enough to coat the back of the spoon. Add colouring, if you like,
