  • About

This simple ham-and-egg dish appeals to everyone. Make it a little more interesting by stirring in a chopped leek and 1 teaspoon fresh thyme with the potatoes. After the frittata cooks, sprinkle it with crumbled goat cheese instead of Cheddar.

Ingredients

  • 1 tablespoon olive oil or butter
  • 8 ounces fingerling potatoes, halved, or baby red potatoes, sliced

Method

Prep at Home

If desired, chop ham and grate cheese. Store in separate containers in the refrigerator.

At Campsite

Prepare a charcoal or gas grill, or assemble a camp cookstove.

Heat oil or melt butter in a 10-inch cast-iron or nonstick skillet over medium heat. Add potatoes; cook, covered, 10 min
