Succotash isn’t usually a vegetarian side, but you won’t miss the bacon too much because the vegetables have a subtle smoky flavor from the grill. Bacon fans can easily stir in a couple of cooked and crumbled slices!

Ingredients

  • 1 cup frozen and thawed baby lima beans or small edamame
  • 2 ears fresh corn

Method

Prep at Home

Portion lima beans or shuck edamame, if necessary.

Shuck corn, removing silks.

Cut onion into wedges. Cut bell pepper in half and remove seeds. Cut ends from zucchini and slice in half. Place cut vegetables in a large plastic storage bag and refrigerate.

Prepare and portion Lemon-Garlic Butter.
