This is possibly one of the easiest ways to make tasty and tender ribs. You can substitute other types of ribs, but baby backs are smaller and cook faster—important if you are rationing fuel. Ribs are often cooked with indirect heat; wrapping in foil protects the meat from too much char in a similar way. To achieve the beloved light caramelized char on the outside, remove from foil, baste with sauce, and grill to desired degree of crispness.
