For moist and juicy pork chops, follow new guidelines from the National Pork Board. Cook pork chops, tenderloin, and roasts to an internal temperature of 145° (medium rare) to 160° (medium), then rest for 3 minutes. Remember to cook chopped or ground pork, like all ground meat, to 160°.
Stir together peach preserves, brown sugar, mustard, and chili-garlic paste; place glaze mixture in an airtight container in the refrigerator.
Prepare a charcoal or gas grill for indirect heat.
