For a more intense smoky flavor, use hardwood charcoal or add some smoking chips to the grill. Serve the seasoned pan juices with bread for soaking up the rich flavor. Foraging for wild mussels? Search close to the waterline during low tide. Look for young mussels, about 2 to 3 inches long, with dark, shiny, black shells and sharp, pointed edges. Just before cooking, scrub well and pull off beards toward the hinges. Above all, only forage for mussels in clean, unpolluted water.
