If you’re lucky enough to come into a lot of asparagus in April or May, or if you find it cheap at the farmers’ market, be sure to save some for later. It freezes remarkably well, and I’m not sure why you don’t see bags of frozen asparagus in the freezer section of the grocery stores alongside the green beans. These flans, made with frozen asparagus puree, are particularly good served with a tomato chutney or tomato preserve.
