Perhaps the best thing to do with carrot pickles besides eating them straight from the jar is to put them on a plate next to a hot sandwich oozing cheese. You could also, of course, slice the pickles and put them right in the sandwich.
Heat a heavy skillet over medium heat. Generously brush one side of each slice of bread with oil and place two slices, oiled side down, in the skillet.
Divide the cheese between the slices in the pan, sprinkle lightly with salt and pepper and nutmeg, and top with the other two bread slices, oiled side up. Cook until the bottom is well browned and the cheese is starting to melt, 1 to 2 m
