This is adapted from a recipe for spiced cherries in Catherine Plagemann’s wonderful fine preserving, which was published in 1967 and reissued in the ’80s in an edition annotated by M.F.K. Fisher. Fisher had strong opinions about many of the preserves in the book (“Banana jam sounds not only awful but impossible”). It probably speaks highly of this cherry preserve that Fisher felt no need to comment on it.
