Jam is wonderful just barely folded into stabilized whipped cream and chilled in small dessert glasses—a classic dessert called a “fool.” Scatter some fresh untreated rose petals on top, if you have them.

Ingredients

  • cups cold heavy cream
  • 1 teaspoon unflavored gelatin powder
  • 1

Method

Put 2 tablespoons of the cream in a tiny saucepan and sprinkle in the gelatin. Let soak for 10 minutes, then place over very low heat and cook, tilting the pan, until the gelatin is just dissolved.

Whip the remaining cream and rosewater together until soft peaks form, then gradually whisk in the gelatin mixture. Whip until firm peaks form. Put the jam in a large bowl and stir in one thi
