Wide, flat romano beans with whole spices and slivers of turmeric-yellowed onion make a stunning addition to a dinner of various Indian dishes, or even to a fall or spring cookout. They pair surprisingly well with bold grilled meats and vegetables or, say, fresh ginger–spiked turkey burgers. When I was testing and developing the recipes for this book and my fridge was stuffed to its ceiling with every kind of pickle imaginable, these are the ones I kept reaching for between meals.
