In early summer, these curly, spirally, bright green alien things protrude from the stalks of some varieties of garlic, and they can be found at farmers’ markets and in Asian grocery stores. These “scapes” have a mild, fresh garlic flavor. The curved tops, while pretty, tend to be tough, not to mention a pain to pack into canning jars; use only the bottom 4 to 8 inches.
