Here’s an easy vegetarian dish—a light lunch or fancy appetizer—made almost entirely from the pantry; The only fresh ingredients you’ll need are eggs and yogurt, which of course are long-lasting refrigerator staples themselves. If you don’t feel like making chaat masala, or have yet to come to an appreciation for its most prominent ingredient, black salt, just use toasted and ground cumin.
