My folks used to put up jar after jar of every kind of tomato sauce imaginable: “Spaghetti Sauce,” “pizza sauce,” “enchilada sauce,” “chiles rellenos sauce,” and so on. They had bushels of tomatoes to process, so I guess it made sense for them to anticipate all the different things they’d do with tomato sauce throughout the year.
