The slow cooker is by far the easiest way to reduce a large pot of tomatoes to a concentrated paste. I do ten pounds of tomatoes at a time, and put the puree into two slow cookers, but you can cut the recipe in half if you’d like (or put half of the puree in the fridge and transfer it to the slow cooker when the first half is reduced), or carefully cook the puree down in one or two pots on the stovetop for a few hours, stirring frequently so it doesn’t stick to the bottom.
