There are few predinner snacks better than dipping thick slices of crusty sourdough bread into this tangy, slightly sweet jarred caponata. Be sure to weigh your ingredients carefully here and don’t reduce the vinegar at all; the eggplant, celery, and shallots are not acidic on their own, and your tomatoes may be borderline depending on the variety, ripeness, and time of the season.
