Not the most beautiful jelly you’ll ever make, perhaps (it looks like plain old apple jelly). But it’s tangy, fresh-tasting, and just reminiscent enough of the stuff many folks have been dutifully setting out with the lamb every spring that you won’t miss the bright green. That said, the last time I made mint jelly, I happened to have a tube of green gel food coloring (something about cupcakes my three-year-old simply had to make), so I dripped in a few drops just for the hell of it.
