Any type of fig will do here, but a light-colored variety, such as the bright green sierra or rosy brown turkey figs, will make an especially pretty jam. I like a mild honey such as orange blossom in this jam so it doesn’t overpower the delicate-tasting figs. I can this preserve in a boiling-water bath with great success (5 minutes in half-pint jars), but since it isn’t sugar-saturated it’s probably best to store it in the refrigerator.
