Pickled cranberries may sound like what the phrase doubling down was invented to describe, and it’s true: they’re tart. But the bitter tartness of the fruit is somewhat softened by the sweet and herbal vinegar syrup, which I think of as a different kind of tart. In any case, these bracing berries will be more than welcome alongside the rich roasts of winter—if you don’t end up cracking open all your jars or giving them as gifts to family and friends at Thanksgiving.
