You can use tart and funky purple muscadines, golden scuppernongs, or blueish concord-type grapes—the kind with seeds and a tough skin, or hull—for pies and cobblers. As you’re smushing the grapes (this might call to mind, for normal people, a Lucille Ball moment, but personally I always think of Rock Hudson and Salome Jens in Seconds), play them off one another, pressing a few of them together in your hand.
