Is this cheating? I just adore limes so much, and I find it a shame that they don’t work all that well in marmalades and the like (their rind is pretty tough, I’ve found, and becomes bitter, and this makes me sad). I love being able to pull this “preserve” of sorts out of the freezer—where it will keep, tightly covered, for months—for a hit or two of my favorite flavor.
