Spoon a few pieces of syrupy fruit onto a cheese plate, or open up a few jars and mix them with shredded fresh apple for a quick, meatless mincemeat filling. Experiment with different combinations of dried fruits—raisins, prunes, apricots, peaches, nectarines, pineapple (low-sugar, if possible), guava, papaya, mangoes . . .

Method

Prepare for water-bath canning: Sterilize the jars and keep them hot in the canning pot, and put the flat lids in a heatproof bowl. (details.)

Put the pomegranate juice, sugar, dried fruit, and orange in a wide, 6- to 8-quart preserving pan. Bring to a boil over high heat, stirring. Lower the heat and simmer, stirring occasionally, f
