This robust chili includes a cornucopia of vegetables and beans simmered in a richly seasoned but not overly spicy broth. You can also add ground turkey or beef to make it heartier and cook the meat along with the vegetables. Raw shrimp may also be cooked this way, or you can reheat diced cooked chicken in the hot mixture. Be sure to have all the spices ready to add to the pan, as this goes quickly once you start. Serve over Cheesy Grits or rice.
