I love these pancakes made with fresh-off-the-cob roasted corn topped with juicy Cherry Tomato Salsa (heirlooms if you can find them) and tangy goat cheese sprinkled on top. It’s a celebration of summertime’s bounty. The combination makes a great brunch or lunch.
Corn roasted in a cast-iron skillet turns the kernels bright yellow and intensifies the flavor. No fresh corn? Sauté defrosted frozen or even good-quality canned kernels for a few minutes in a little hot oil, turning a coup
