Several years ago, I judged a hazelnut recipe contest in Istanbul. (Turkey produces more than half of the world’s supply of the nut.) The winner was a large sweet potato rösti with candied nuts and an apricot glaze. Since then, I’ve made several sweet potato pancakes but prefer to buy what are labeled yams.
