This crunchy potato cake is a delicious partner for roast chicken, shrimp, sliced steak, or even with a hamburger on top of it. Season the potatoes with salt as you add them to the pan to prevent them from becoming watery. Don’t worry if the slices are irregular; just press them flat in the pan. A mandoline or OXO handheld slicer can be used for the potatoes, but a food processor fitted with a 2mm thin slicing disk is a safer and quicker way to keep your fingers in good shape.
