Native Americans gave us many culinary gifts, including clambakes from New England’s Penobscot tribe and pozole, this soupy-stew, from Mexico. In the Nahuatl language, the word pozole means “hominy,” the dried kernels of corn with the hulls and germ removed, that is the traditional base of this dish.

Like cioppino and bouillabaisse, there are numerous versions of pozole, including those that are red, white, and green in color, each with different seasonings, and those with po
