In this creamy-spicy, bright green condiment, scallions, parsley, cilantro, tarragon, and jalapeño are puréed with avocado, buttermilk, and mayonnaise. It takes minutes in a food processor or electric blender and keeps for months in a sealed jar in the refrigerator. Besides being a scrumptious salad dressing, use as a dip for vegetables (both cooked and raw), other fish dishes, or as a sandwich spread.
