These pork chops seasoned with a Southern-style rub are flavorful and juicy. I prefer bone-in chops because they keep the meat moist and more flavorful. For even cooking and less shrinkage, remove the chops from the refrigerator about 30 minutes ahead of time and season them generously with salt at that time to allow the flavors to penetrate. Once seasoned, the pork takes minutes to cook. Because cast iron retains its heat, after the first side is seared, turn the heat down to low and use a
