Peach-Rosemary-Ginger Crostata

I love using herbs in unfamiliar, but ultimately exciting places, such as the rosemary that subtly scents the crust in this free form peach tart. A small amount of the herb is also added at the end. I’ve made it with peach preserves mixed with crystallized ginger or ginger preserves. Both versions are delicious. A final drizzle of bourbon adds an additional lift to the flavors. Using peaches picked and flash frozen at the height of the season brings the taste and texture of seasonal fruit c
