The sweet, acidic flavour from the elderflower vinegar is a lovely way to elevate an oyster.

We put a little damp salt on the plate to balance the oysters on.

Ingredients

Method

Peel the cucumber, then cut it in half lengthways and, using a spoon, scrape out the seeds.

Cut the cucumber flesh into small dice and put it in a bowl, then sprinkle with the elderflower vinegar.

Spoon a little of the cucumber on top of each oyster. Add a few drops of rapeseed oil and season with sea salt.
