A traditional dish from the south of France called socca, chickpea pancakes are the perfect vessel for all sorts of toppings and are delicious at any time of day. I’ve topped these with grated Grimbister, an Orkney cheese with a lemony tang that works really well with the peas, but if you can’t find it Parmesan will be as good. Use 40g store-bought pickled onions if you don’t want to make your own.
