Growing up my mum would make cock-a-leekie soup a lot. My sister and I weren’t big fans of leeks or prunes, so mum would make the base stock and finish ours with chicken and rice. I now eat everything and love making my own version of it, packed full of veggies. This recipe makes a big pot, but I keep it in the fridge and it’s great for a couple of days.
