Asparagus and roast chicken hollandaise

Asparagus is one of the most amazing vegetables – so versatile and so tasty! Dominic, our head chef at The Little Chartroom, put this dish on the menu and it’s been a real hit: it is a classic with a twist. You’ll need a couple of hours to get the chicken stock to the right place to make the hollandaise, but it’s worth the wait.
