As I was working my way through the book writing the recipes, I joked with my husband that maybe we should have just brought out a book that had all the brunch dishes that we used to do, as there were so many favourites. Kedgeree was another regular on the menu – it’s a very well-known dish and this is my version.

In the restaurant we smoke our own fish, which is really easy to do at home. But un-dyed, smoked haddock from the fishmongers works per
