Who doesn’t love cake, cream and jam? This is incredibly light and moreish and a lovely way to enjoy gooseberries. Store any leftovers in an airtight container in the fridge.

Ingredients

Earl Grey Chantilly

  • 300 ml double cream
  • 20 g icing sugar
  • 1

Method

First, make the Earl Grey Chantilly as it needs time to infuse and chill. Put the cream in a pot and warm over a medium heat until steaming. Stir in the sugar, then add the tea and leave to infuse for 20 minutes. Strain through a sieve and then put the tea-scented cream into the fridge, covered with cling film, for at least 2 hours. When it is very cold, whip to soft peaks.

For the goos
