This recipe will make more elderflower cordial than you need, but it’ll keep for a few weeks bottled in the fridge and is delicious as a soft drink mixed with soda, or to make a strawberry and elderflower sundae.
In a large pan, bring a litre of water to the boil. Add the sugar and mix until dissolved. Leave to cool.
Wash the elderflower heads in cold water and drain, then add them to the cool syrup with the lemon, orange and citric acid. Make sure everything is submerged and infuse for 24 hours.
Strain through a muslin cloth and store in a bottle or Kilner jar in the fridge.
