Ingredients

  • 200 g sunflower seeds
  • 175 g sunflower oil
  • 2 garlic

Method

Place 190g of the sunflower seeds and the oil in a pot and bring up to a medium heat. Gently toast the seeds in the bubbling oil for about 10 to 15 mins, until they are a pale golden brown – they will keep browning as they cool in the oil. Leave to cool.

Put the seeds with their cooking oil into a blender and add the garlic, vinegar, salt and 225ml water. Blitz until smooth and silky –
