This is a delicious dish to have as a starter or snack: the sweetness of the peach is so good with the rich parfait. I’d suggest making the parfait the day before as it needs time to cool and set. The top layer of the parfait will oxidise, so the best thing to do is to scrape it off before you serve it and use all the delicious parfait underneath.
